Ingredients 

· 1kg of pork meat 

· 50g of butter 

· Oignons, at least 500g 

· Cloves of garlic 

· Rosemary, thyme 

· Pepper, salt 

· 12x Potatoes 

This recipe is one of my favorite ❤️, it is not that expensive and it is so easy to prepare! When having some guests home, you can be sure it will be very much appreciated 😋. The issue sometimes when invitings friends or family is that you spend often so much time in the kitcken that you forget about the most important: the time spent with your closest! 👯 *

Methods 

STEP 1 Try to get the meat from a local butcher, you will support local business and usually get great quality meat. Before you start to cook, take the meat out of the fridge at least 30 minutes in advance. Prepare for the slicing the oignons and garlic, get your baking tray ready and warm up your mortar, you will need nothing more 😁.

STEP 2 While you will be preparing the meat, pre-heat your oven up to 180˚C. The first preparation step will be the surgery one. Pierce the meat in several places and insert half cloves of garlic in each hole. Personnaly, I love garlic therefore I am not saving it but based on your taste, you can either put less or none but I would advise to put more 😀. For the surgery part, I love to use my utility knives which have the perfect size and dimensions for that matter. Check out on those beauties!

Prepare your mignonette of pepper and salts in your mortar and then give your meat a very nice massage with it. On top of the meat, add some rosemary and thymian. Meanwhile, you will be cleaning the potatoes that you will adding to the tray later.

STEP 3

Now that the meat is prepared, it is time to add the potatoes around the meat and the sliced oignons all over it. Don't be shy, there is never enough oignons. With the cooking, it will reduce and look much smaller that what you would be expecting! 🔥Put some oil on the the tray but mainly pieces of butter over the meat.

STEP 4 It is the last and most important step, the baking! Your oven is now up to 180˚C so put the tray in it for 1h30! Don't forget to regularly pour the meat with the oil from the tray. It will avoid a total burn-out! 🔥

The meat after cooking is now ready to be cut! And for this, I love to use my cutting board with its recessed channel to keep all the juice!
