Ingredients 

· 3x avocados 

· 2x shallots 

· 2x gloves of garlic 

· 5x cherry tomatoes 

· 2-3 jalapenos piments (to be adjusted) 

· 2x limes' juice 

· 4x tbsp of olive oil 

· 2x tbsp of Xeres vinegar 

· 1x tbsp of french mustard 

· 1x tbsp of capers 

· a bouquet of parsley 

· mignonette of pepper, salt, cumin 

Methods 

STEP 1 You won't be able to find any easier instructions! let's just prepare all the ingredients and make no mistake, it is not a fight! Chop your shallot Smash your garlic Cut and clean your piments as well as your avocados Squeeze your limes as if you didn't like them Clean and roughly slice your parsley. Last but not least, get your blender ready, battle is coming!

STEP 2 Start slowly, mixing shallot, garlic, 1x avocado, oil, vinegar and mustard. Add progressively all ingredient left and mix. Enjoy the momentum and relax.

STEP 3 After that hard job, let your Green Sauce rest in the fridge for about one hour.   

STEP 4 Serve fresh with tacos or tortilla chips. You can keep the sauce in the fridge for about 4 days.

Cooking Tips  The more avocados you will add, the creamier will be the sauce. Be very careful with piments, know your limits and adjust quantities.   

Goes well with  You can also use the sauce as a dressing for salad.
